Learning to Watercolor: It's Not Just for Kids {Review and Giveaway}

Art class.  Who didn't love it in school?  It was one of my favorites growing up (many, many years ago).

I know my kids love art time during our homeschool routine.  In fact, we pretty must do some sort of art activity every day, whether it be drawing, painting or learning about a famous artist.  At least one day a week though I try to teach them a specific art technique such as line formation, shading and how to even use different types of paints.

Now when it comes to using different types of paints, in order to properly teach them correct art techniques, I researched many types of homeschool "curriculums" or even those sites used by other homeschooling families.  

Watercolor was one of the types of painting that I've seen a lot of different methods on and I actually wanted to learn how to watercolor properly myself.  Watercolor isn't just dipping your brush into water and then dipping it onto the solid circle of paint, but how to blend the paint, using different amounts of water to get the right colors, and more (who knew there were so many different ways to use watercolor and types of watercolor paints).

That's when I found Emily Lex's Creative watercolor classes.  Her lessons are short, less than 10 minutes each, yet a wealth of information.  In her watercolor class, she goes over what types of supplies you will need, proper technique and even how to do lettering with watercolors.  She not only offers classes on watercolor, but also watercolor for kids and a class on penmanship (which is something I will definitely be looking into further).



I was generously gifted the opportunity to try Emily's watercolor class, watercolor for kids, plus two packages of beautiful watercolor painted scripture cards.  Now, I am no pro when it comes to watercolors, nor a pro for any type of art other than my knowledge of a handful of famous paintings and how to do some pencil drawings, but I will honestly say that after watching a few of her videos and applies the techniques, I am LOVING using watercolors.  To me, using watercolors is so much more easier to apply different shades of colors and are more softer in appearance than when using acrylics.  

Oh and don't worry if all you have is the type of watercolor paints you have that are the oval shape and popular in kid's art classes for school.  Just use what you have and can afford.  That is one of the beauty's of art itself - there is no need to go broke obtaining art supplies. 



What I really like about the watercolor workbooks that she offers for learning watercoloring is that you can choose from flowers or animals workbooks.  Each workbook offers a sample lesson with colors used in her example on one page and on the other is a faint outline of the image to help when you paint.  There are also two blank watercolor papers between each "lesson" so you can try it yourself without the outline.

My New Favorite Cookbook {Review}

Recipe books. I have many of them, all ranging from the classic red and white checkered one we all grew up with, to ones with recipes to help with autoimmune issues, keto, low carb, no sugar, the list goes on and on.  My current favorite cookbook, Recipes From Around the World, is one that I'm not only loving the recipes out of and incorporating them into our geography homeschool lessons, but one that is also for a great cause.

Newest Devotional to our Homeschool Bible Studies {Review & Giveaway}

I'm going to be honest, homeschooling isn't easy.  Making sure one child has meet all the required subjects is one thing, but now that G (who is 4 years old) has started to become interested in learning, I now look for books that an be used to cover more than one subject, thus cutting our school time from almost all day to about 3 to 4 hours total. 

I am always on the lookout for quality books (no twaddle aloud since we are following the Charlotte Mason way of learning) that will hold my children's' attention (and mine) for more than 2 minutes can sometimes be difficult.  We had previously been using pastor Louie Giglio Indescribable as part of our Bible, science and geography, along with some copywork thrown in, it was an invaluable addition to our not only our school work, but also our daily lives.

A Complete Guide to My New Favorite Devotional Bible {A Review and Giveaway}

I never thought that I would want, or even consider, using another Bible, other than my well-used King James Version Bible, to study God's Word.  That was until I found the new Christian Standard Bible (in)courage Devotional Bible.

I've actually been looking at many different study Bibles to use, but after researching and perusing the many different types, styles and even languages of study Bibles, the CSB (in)courage Devotional Bible was a perfect fit, and is geared towards women wanting to read, learn and study more of God's Word.

There were many different features of the CSB (in)courage Devotional Bible that caught my eye.

The general layout, colors and photos used throughout the Bible were very calming and easy on the eyes.  As a visual person, I tend to chose things based on what colors and designs are used.  While this may seem superficial, if I am to actually use the Bible as intended, and not just sit on my desk or bookshelf, then it must appeal to me visually or I am more inclined to not use it.



One of the great features that I have not seen in any other study Bible until I found the CSB (in)courage Devotional Bible was at the beginning of each book in the Bible, there is a "Book Introduction," which includes a brief history of the book, how it connects with God's story and how you can use it in your daily life.  These introductions also list what theme of devotionals are found in the of the Bible.



Now, as the title implies, it is a devotional Bible (even though I am using it as a study Bible), in that there are 52 reflective devotions throughout the Bible.  Each devotional is categorized into one or more of ten themes, ranging from "Beautiful Brokenness" to "The Sacred Brave."  These ten themes are also color/design coded so you can readily identify which "theme" the devotion falls under.



While there are other things that I really enjoyed using this Devotional Bible, including reading plans, over 260 devotional pieces, and beautiful photos of themed verses (again a bonus for this visual learner), one of the other features that spoke to me are the mini-stories of over fifty women in the Bible and how God was present in each of their lives.

Top 5 Ways to Survive the Holidays

Listen, do you hear that?  That, my friend, is the sound of peace and quiet.  It is something that I do not have the luxury of enjoying too often because in about an hour, it will be mass chaos - the kids will be running around (and most likely whining about having to get up so early), my oldest daughter will be waking up 15 minutes before she has to leave for college so we will be rushing out the door after she becomes frantic and anxious about being late for class.  All of this will be going on while the dog will be circling round your feet trying to catch any crumb that falls to the floor while making breakfast.

This is my daily morning routine, even after reading countless "how to be more organized in the morning" books, things are still unorganized, but I have come to accept the chaos.  After all, one day, when the kids are grown up, the house will be quiet once again.

However, during this time of  year, with back to back holidays, life can get downright stressful.

There are baking marathons for last-minute holiday parties, frantically running for that last minute gift that you forgot to buy for your nephew, and the never-ending to do list that seems to get longer by the minute.

Yes, the holidays are stressful, but I'm going to let you in on a secret...they don't have to be.  It is only stressful if you allow it to become overwhelming and stressful.  Yes, I am guilty of this both in the past and presently.  Allowing the stress of the holiday not only robs you of your sanity, but your energy and health.

But there are five things you can do to help keep your sanity during the holiday madness.

1.  Get Plenty of Sleep




Moms (and Dads), can I get a show of hands from those that have kids under the age of 2 that do not get at least 8 hours of solid sleep.  You know, that kind of sleep where you are not woken up in the middle of the night for something to drink, a nightmare, or even the baby crying because her diaper leaked (because changing bed sheets in the middle of the night is always fun).

I would guess that most, if not all, of you raised your hand (or at least thought about doing so).  And it isn't just kids that can cause you not to get enough sleep.  Everyday stresses, that nagging thought in the back of your mind that you forgot to do something that day but you can't remember what it was you had to do, or even staying up too late to watch the late night shows.  There are many, many things daily that rob you of getting good, quality sleep every day.

But did you know that not getting enough sleep can wreak havoc on your body?  Sleep is a necessity for your body to rejuvenate itself, to help rebuild muscle tissue to rebuild itself from lifting weights earlier that day, and to just rest to prepare itself for the next day.

When you do not get enough sleep, there are so many health consequences that can affect your body.  You are more susceptible to catching colds due to a lowered immune system, higher chance of heart disease, lowered ability to focus on daily tasks, lack of energy, gaining weight - the list is ongoing.

If you are not getting enough sleep, take control of what is going on not only during the day, but also at night, especially before bed.  Eating a balanced diet with plenty of good fats throughout the day, drinking plenty of water, but even more important is to put the phone/computer/etc. down and detach yourself from the internet (yes, it is hard to do, but so necessary) and turn the television off. All of these things are vital to getting quality sleep and feeling rested when you wake up in the morning.   For more ways to improve your sleep, check out this article here.

2.  Get Your Sunshine On


Yes, it may sound a little crazy, but not outside and soaking up some sun every day can make you feel tired, which often results in a lowered response to dealing with stress.  



The sun plays a vital role in how our body produces Vitamin D, also known as the "sunshine vitamin."  Vitamin D, more specifically Vitamin D3, plays a huge role in how our body absorbs calcium, helps with depression, may decrease heart disease and even help with weight loss.  Not to mention it may also help with fatigue.

Now I'm not saying to go outside every day for 30 minutes or more without sunscreen to get the full benefits of getting enough Vitamin D.  This may be hard to do during the winter months, especially for those that live in the north.   But by eating foods rich in Vitamin D, such as eggs, salmon and yogurt, is important on a daily basis.  Also, taking a quality vitamin supplement that contains Vitamin D (and Vitamin D3) is important to add to your daily regimen.


3.  Relax and Destress


Relaxing, a peaceful hot bath, reading a book without interruption - all of these things may seem impossible when you have kids.  But it is so important that you have the chance for "me time" daily.  Even if it is just 30 minutes a day to unwind, you need and DESERVE it.  Taking this time for YOU is necessary to refocus and help to unwind after a long day at work (or even staying home with your kids all day).



For me, I have a nice cup of coffee (Bulletproof coffee is my favorite), essential oil diffusing, and a good book to help me focus and prepare for the day ahead.  This is my "me time."  Yes, there are days that I may not get my "me time" in the mornings due my little one getting up too early or a change in our routine for the day, but I still make the time later in the day for me.  You deserve it.


4.  Eating Healthy




During the holidays this may be the hardest thing to do.  Between office parties, family gatherings and homemade candy from my family, there seems to be a never ending supply of chocolate and cookies in some form or another in my kitchen, and they all seem to be calling my name, especially when I've had a particularly rough day.

Now, more than ever, is it important to eat healthy on a daily basis and limiting the amount of sugar and processed foods.  Eating a diet high in green leafy vegetables, good for you fats like avocados and quality proteins like fish and grass-fed meats are vital to keeping your body running at an optimal level to help ward off colds and, if you are like me, eating too many unhealthy foods.

If you know me, then you know my love of coffee, which I include as one of the major food groups. Some may say that coffee isn't healthy, while others will say that it is.  I am one of those that say that it IS healthy for you, as long as you have a good, quality coffee.

Yep, you guessed it, exercise can help keep you sane and help fight off those unwanted holiday pounds.  I know that exercise is probably the last thing you want to do until the New Year, but just taking 30 minutes at least 5 times per week is all you need to help you to either prepare you for the day (if you exercise in the morning) or refresh and help your sleep (if you exercise at night).

Even better is if you can get outside, not only for the fresh air, but for the Vitamin D.  It doesn't have to be anything extreme like cross fit, but even just a walk around the block is all you need to obtain the benefits of exercising.  


Taking care of yourself is the first step to surviving the holidays.  When you take care of yourself, you are able to have plenty of energy to make it through those long lines at the mall, the to do list that hasn't been completed from two days ago, and all the other things that life throws your way.

Zucchini and Sweet Potato Hash {Paleo, AIP}






Coming up with new recipes while on an already limited allowed foods you can eat isn't easy.  Not to mention when you have a toddler and 5 year old constantly needing your attention, having too cook three meals a day is not ideal, which means that at times, you skip or miss a meal and which can lead to cheating and eating foods you are not supposed to eat.

One way to conquer the temptations is to always have something readily at hand, either by making all your meals one day of the week, or doubling (or even tripling) meals when you prepare them.  I typically will prepare a few meals one day a week, but will also triple meals so that there are plenty leftovers for at least a day or two.

Zucchini and Sweet Potato Hash is just one of those meals.  It is so easy to prepare, requires a little preparation and takes less than 30 minutes from start to finish.


Ingredients


2-3 sweet potatoes
2-3 zucchini
1 pound ground turkey 
Sea salt

Directions

  1. Brown ground turkey in a slightly oiled pan on medium.
  2. While turkey is cooking, peel and cut sweet potatoes and zucchini into cubes.
  3. Once turkey meat is cooked, add sweet potatoes and zucchini and add in a pinch of sea salt.
  4. Mix in the sweet potatoes and zucchini and cover pan.
  5. Occassionaly stir mixture every few minutes.  
  6. Cook for 20 minutes or until sweet potatoes are soft.
  7. Remove from heat and allow to cook before serving.
This mixture will feed 3-4 people.  You will want to double the recipe to use as leftovers.  

There are many variations in terms of ingredients that you can add to this basic recipe, such as cooked bacon, yellow squash and even spinach (added to the mix once it is removed from heat).  You can also substitute ground turkey for any type of ground meat, such as beef or chicken.  I've even used leftover cooked chicken breasts, shredded and used in place of ground meat.

Plantain Taco Shells {Paleo, AIP}




Tacos are a staple food item in our household.  But when you start eating Paleo (or more specifically AIP like I am currently doing), any grains, including corn, are out of the picture.  And yes, you can have "tacos" with a lettuce wrap instead of a shell, but seriously, sometimes you just need that crunch - you know the crunch of the shell and all the meat and lettuce falls out onto you lap kind of crunch.

So after looking at Pinterest for different types of foods to make while on the AIP way of eating, I stumbled across using plantains as tacos.  Now I had never heard of plantains and were not easy to find in the grocery store.  However, the Super Target (of all places) sells them, but you can also find them at most ethnic grocery stores too. They tend to last a few weeks in the refrigerator so by them in large quantities.


When using plantains, you want to buy them when they are green - the greener the better.  As plantains ripen to a yellow then black, the sugar content also increases.  So when you substitute plantains for things like corn shells, you do not want a sugar taste at all.  Green plantains are also hard to open unlike a banana.  You will need a sharp knife to slice it open.

Now I must mention that this is the first time I have made plantain taco shells, so this was more like an experiment than anything.  Honestly, they were not hard to make, just a little dangerous (as you will see why below).  In fact, they were quite tasty and very filling.

Ingredients


3 green plantains
1/2 cup of oil (olive, avocado, or coconut)
1 tsp sea salt

Directions

  1. Preheat oven to 325 degrees.
  2. Peel and cut plantains into chunks. 
  3. Put cut plantains, oil and salt into blender or food processor.
  4. Blend ingredients until you get a smooth, creamy mixture. 
  5. Take 1/2 cup of mixture and place onto a parchment paper lined baking sheet.
  6. Smooth the mixture out until it is about the size of your hand.
  7. Continue to do the same with the remaining mixture.  
  8. Place in oven and bake for 25-35 minutes until the "shells" are cooked, but not burnt and remove from oven.

             

Now the tricky part.

You will need to be very, very, very careful on this step

    

  • Take one of the "shells" and form the shell by folding it over gently.  Place the "shell" upside down on your oven rack (see picture below).  DO NOT TOUCH THE RACK!  IT IS HOT!!!

Please disregard how dirty my oven is.

TIP:  Place baking sheets under the "shells" so that if there is any oil that drips off, it does not drip onto your oven and cause a potential fire.

TIP:  Do not worry if your "shells" do not form to be like tacos at this point.


  • Bake for another 20 to 25 minutes, being careful not to burn the "shells".


Remove from the oven very carefully and set aside to cool.  The "shells" will cool and harden.

Stuff with your favorite taco stuffing.

Now Its Your Turn

I would love to hear what you think about using plantains to make taco shells.  I personally liked the taste and texture of them - my husband even liked them (which is a shock). 

I plan on trying to make them next time using a taco rack to save myself from burning myself on the oven and getting a more uniform shape and even trying to make them as "nachos" and even taco salad shells.

Chicken Alfredo "Pasta"



Having food allergies or intolerances mean you sometimes are forced to give up some of your favorite foods,  Alfredo sauce was a favorite sauce for just about anything pasta related, but going gluten and dairy free meant I could no longer have alfredo sauce made with tons of cream.

But with some easy substitutions, dairy free alfredo sauce was created.  The texture is similar to the regular dairy based sauce, however, now not only is made dairy free, but also healthier, and with only three ingredients.


Ingredients


Alfredo Sauce
1 1/2 cup Original Almond milk, unsweetened
1 package of Dajia mozzarella "cheese"
1/4 cup of Earth Balance spread (dairy free option) or butter


1-2 chicken breasts, cooked, shredded
1 medium spaghetti squash, cooked
1 head of broccoli, steamed

Directions

  1. In a frying pan, place the Earth Balance or butter and let melt over medium high heat. 
  2. Once melted, add in the almond milk and "cheese," 
  3. Using a whisk, you will want to stir, stir, stir so that the mixture does not burn to the pan.
  4. The mixture will thicken to a creamy sauce.  

At this point, you will want to turn the heat to a low-medium and add in your shredded chicken and broccoli, or whatever vegetables you want to use.

For a low carb option, serve over spaghetti squah or any other type of vegetable noodles,  You can also use any type of noodles - gluten free or whole wheat - for those that are not low carb.

Let's face it, when you are a few days in to a new way of eating (aka diet), things may be going really well at first, then boom, cravings of junk food hit and even the temptation of wanting to yank the bowl of ice cream your 4 year old is eating right out of her hands (I would never do that though).

But what if I told you that you could still have ice cream that isn't bad for you and it won't ruin all of you hard work?  No, I'm not kidding.  And what if I told you this type of ice cream only requires 2 ingredients that I'm sure you have in your kitchen.


Servings: 2 
21 Day Fix:  1 1/2 yellow

Ingredients

2 medium bananas
1 cup strawberries
Unsweetened almond milk

Directions

  1. Cut bananas into pieces.
  2. Rinse and cut tops off of strawberries.
  3. Place fruit in plastic bag and freeze for 4 hours or overnight.
  4. Place bananas and strawberries in blender and blend until smooth.
  5. Add 2 to 4 tablespoons almond milk, if needed, to make it creamier.  
  6. Enjoy

Going Paleo

How going Paleo can help your health.

If you have been following my journey to health, you know that I have been battling not only thyroid issues, but digestive issues too.  When I started my journey, I began the SCD (Specific Carbohydrate Diet) to ease my way from being a vegan/vegetarian for almost 20 years, to eating meat (mainly in the form of chicken and turkey).  It was during this time that I started to hear more and more about Paleo and Primal.  

Through reading and researching more about what Paleo and Primal is, I heard of some amazing health transformations from those that chose to deviate from the SAD (Standard American Diet) to Paleo or Primal, from losing weight to even healing their digestive issues, which is my main goal.

What is Paleo?

Paleo is a way of eating like our ancestors the caveman did:

  • lean meats
  • seafood
  • fruits
  • vegetables
  • healthy fats from grass fed meat, fish, nuts and avocados.           

Foods that you avoid include:

  • Grains
  • Processed foods
  • Processed sugars
  • Legumes
  • White Starches
  • Junk Food
  • Hydrogenated Oils
  • Alcohol

Now dairy may be the big decision maker in going Paleo or not.  However, when you chose to go Primal, you are following the Paleo way of eating, but are allowed dairy, specifically, raw dairy and cheeses.

Also, when you eat Paleo/Primal, one of the key concepts is to eat organic, non-GMO and grass fed meats. By doing this, you will be limiting your bodies' exposure to harmful chemicals, antibiotics and hormones that our foods are injected or sprayed on.


Why Paleo?

Paleo has so many health benefits, ranging from losing weight to healing autoimmune diseases and more.  If you think about it, our ancestors did not have the health issues that seem to be plaguing our generation (at least none that we know of).

All of these sypmtoms are because if you have been eating the SAD way, then you will be going through a detox when you "clean up" your bad eating habits and start eating food that actually nourishes the body instead of dumping chemicals and unhealthy fats in it.
