E is for Eggs


Eggs are a cheap protein and with Easter, if you are like me, you have a ton (well, not a ton, but at least 2 dozen) brightly colored Easter eggs that are now sitting in your refrigerator.  So what to do with all of them?  Well, you can eat them of course, but you can only eat so many hard boiled eggs until you get tired of them.



Try these 3 recipes to use up all of the hard boiled eggs.

1.  Deviled Eggs



Deviled eggs are a classic hard boiled egg recipe.  While the addition of mayonnaise may not be the healthiest, you can either use mayonnaise that is organic or make your own.

Ingredients:

6 hard boiled eggs
1/4 cup of mayonnaise
1 teaspoon of mustard
1/8 teaspoon of salt
Ground pepper to taste

Directions:

  • Peel the hard boiled eggs.
  • Cut the eggs in half and remove the yolk.
  • In a medium size bowl, mash the yolk and mix in the mayonnaise, mustard, salt and pepper.
  • Scoop the egg yolk mixture and put into the egg white.
Optional:

  •   Sprinkle paprika on top of the deviled eggs.

2.  Cobb Salad


Cobb salad is a healthy way to not only use up hard boiled eggs, but also a great way to get in your daily intake of greens, extra protein and bacon (yes, I consider bacon a part of its own food group).

Ingredients:

1/4 cup of cooked chopped bacon
2 hard boiled eggs, chopped
6 cups of lettuce (romaine, iceberg, etc.)
2 medium tomatoes, diced
1/2 avocado, diced
1 cup of cooked chicken breast, diced
1/4 to 1/2 cup of crumbled blue cheese

Dressing:

2 tablespoons white-wine vinegar
2 tablespoons of extra-virgin olive oil
1 tablespoon Dijon mustard
1/4 teaspoon salt
Ground pepper, to taste

Directions:

  • Place chopped lettuce on a plate.
  • Place other ingredients in an organized pattern (such as shown on above photo) or mix all other ingredients together and place on top of lettuce
  • For the dressing: Wisk all ingredients in a small bowl and either put the dressing on the salad.
Optional Ingredients:
  • Dressings can be any type you would prefer: olive oil, balsamic vinegar, or even an organic ranch dressing.
  • Blue cheese can be substituted for feta cheese.
  • Instead of 2 tomatoes you can substitute for 6-8 halved cherry tomatoes.

3.  Egg Salad


Egg salad is another versatile recipe.

Ingredients:

6 hard boiled eggs, diced
1/4 cup of mayonnaise
1 tablespoon of mustard
Salt and pepper to taste

Directions:

  • Peel the hard boiled eggs and dice.
  • Mix the eggs in with the mayonnaise, mustard.
  • Salt and pepper to taste.
Optional:
  • For additional nutritional benefits, you can add in 1/2 diced avocado.
  • For a low carb version, you can use lettuce as a wrap instead of bread.
